These Mint Chip Protein Balls Have Got It All

Protein. Good Fat. Healthy Fiber. Important vitamins and minerals. Real food. No, we're not talking about dinner, we're just looking at an easy-to-make, treat-like, superfood snack: balls! Making superfood “balls” (for the record, maybe “bites” is a little more of a flattering term, eh?), is a great way to ensure even your sweet impulses are met with a wholesome response, and filled with the essential nutrients your body is truly craving. What's more, you can make a massive batch of these balls in minutes, and be set for days – or even weeks – with grab-and-go snacks that the whole family will love (hint: they're great stashed in school lunches, too).

 

We're constantly playing around will quick recipes like these, and our most recent, uber-popular ball recipe uses protein powder, which we're big fans of including in all kinds of recipes outside of just smoothies, as a simple way to boost nutrition. Here at Luminberry HQ, we've become fast fans of Navitas Organics new Protein & Greens blend for its versatile unflavored (and unsweetened) taste, which goes so well in our Mint Chip Protein Balls recipe! Nevertheless, this recipe is seriously flexible, so if you have another protein powder on hand, that's totally fine too: you could just as easily include your favorite chocolate or vanilla-flavored blend in here as well. At the end of the day there's just 3 rules: Get superfoods! Get creative! And get ballin'!

 

 

Mint Chip Protein Balls

 

These treat-like bites make an energizing snack that are surprisingly full of benefits: healthy protein, vitamins and minerals, fiber, and more ... thanks to the versatile addition of superfood protein powder.

 

Makes about 3 dozen

 

1 cup raw almonds

1 cup (packed) Medjool eates, pitted (about 16 large)

3 tablespoons Navitas Organics Essential Blend Protein And Greens, or vanilla/chocolate protein powder of choice

¼ cup unsweetened shredded Coconut, plus extra for rolling

2 tablespoon maple syrup

2 teaspoon vanilla extract

¾ teaspoon peppermint extract

1-2 pinches sea salt

¼ cup cacao nibs

¼ cup chocolate chips (stevia-sweetened or regular variety)

 

 

In a food processor, combine the almonds and the dates. Process until ground down into a crumbly dough. Add the Navitas Organics Essential Blend Protein And Greens or protein powder, ¼ cup coconut, maple syrup, vanilla extract, mint extract, and one or two large pinches of salt. Process until well combined. Stop the machine and test the consistency – the dough should stick together easily when pressed between two fingers.* Add the cacao nibs and the chocolate chips. Process briefly to partially break down the chocolate, while leaving large chunks and nibs throughout, for texture.

 

A tablespoon at time, shape into balls, and roll in extra shredded coconut. Stored at room temperature, Mint Chip Protein Balls will keep for several weeks.
