With the exception of a fruit pie, a marinade for the grill, or maybe a salsa to keep up with the garden's tomato explosion, there's not quite as much going on in the kitchen. As recipes are shorter and simplified, now is the time for uber-simple healthy snacks you can whip up in minutes, and get on with enjoying some outdoor time by the water or under a tree.
Matcha Yogurt Dip
Metabolism-boosting matcha subtly enhances the flavor of yogurt, and is a phenomenal accompaniment to sweet fruits like apples and pears. Use as a quick snack dip to serve a crowd, or layer up in a bowl for a single-serve breakfast parfait.
Makes 1 cup / Serves 2-4
1 cup unsweetened Vanilla Coconut Milk Yogurt
1 teaspoon matcha powder
¼ teaspoon almond extract (optional)
1 tablespoon maple syrup, plus extra for serving
2 cups chopped fruit, such as apples, pears, bananas, or strawberries, for dipping
In a small bowl, whisk together the yogurt, matcha powder, almond extract, and 1 tablespoon maple syrup until smooth. Transfer to a serving bowl, drizzle lightly with additional maple syrup if desired, and serve with chopped fruit, for dipping.
